Ingredients:
- 8 rice paper wrappers
- 1 cup cooked vermicelli noodles
- 1 cup shredded carrots
- 1 cup cucumber, julienned
- 1 cup cooked shrimp or tofu strips
- Fresh mint and cilantro leaves
- 1/4 cup peanut butter
- 2 tablespoons SISUU Tonic
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- 1 teaspoon maple syrup or honey
- Water to thin
Make Me:
- Soak rice paper wrappers in warm water until pliable, then place on a damp towel.
- Arrange vermicelli noodles, shredded carrots, cucumber, shrimp or tofu, mint, and cilantro in the center of each wrapper.
- Fold the sides over the filling, then roll tightly.
- In a small bowl, whisk together peanut butter, SISUU Tonic, soy sauce, lime juice, and maple syrup or honey. Add water to thin if needed.
- Serve rice paper rolls with peanut satay dressing on the side.
