Packed with vibrant colours and wholesome ingredients, the Pickled SISUU Carrot Buddha Bowl is a feast for both the eyes and the taste buds. The pickled carrots add a tangy crunch, perfectly complementing the nourishing base of quinoa, greens, and chickpeas.

Ingredients:

  • 1 cup cooked quinoa or rice
  • 1 cup mixed greens
  • 1/2 cup chickpeas, cooked or canned
  • 1/2 cup shredded carrots
  • 2 tablespoons SISUU Tonic
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon maple syrup or honey
  • 1 avocado, sliced
  • 1 tablespoon sesame seeds
  • Salt and pepper to taste

Method:

  1. In a small bowl, combine shredded carrots, SISUU Tonic, apple cider vinegar, and maple syrup or honey. Let sit for at least 10 minutes to pickle.
  2. In a serving bowl, arrange cooked quinoa or rice, mixed greens, and chickpeas.
  3. Add the pickled carrots, avocado slices, and sprinkle with sesame seeds.
  4. Season with salt and pepper to taste.
  5. Serve immediately.
