Pickled SISUU Carrot Buddha Bowl

Ingredients:
- 1 cup cooked quinoa or rice
- 1 cup mixed greens
- 1/2 cup chickpeas, cooked or canned
- 1/2 cup shredded carrots
- 2 tablespoons SISUU Tonic
- 1 tablespoon apple cider vinegar
- 1 teaspoon maple syrup or honey
- 1 avocado, sliced
- 1 tablespoon sesame seeds
- Salt and pepper to taste
Method:
- In a small bowl, combine shredded carrots, SISUU Tonic, apple cider vinegar, and maple syrup or honey. Let sit for at least 10 minutes to pickle.
- In a serving bowl, arrange cooked quinoa or rice, mixed greens, and chickpeas.
- Add the pickled carrots, avocado slices, and sprinkle with sesame seeds.
- Season with salt and pepper to taste.
- Serve immediately.
